kombu dashi
Super easy cold brew dashi. There are options for what to do with the used kombu in the link.
Ingredients:
1 piece kombu
2 cups filtered water
Instructions:
Combine kombu and water in a clear container and let steep in:
Direct sunlight for 2-3 hours,
Room temperature for 4-5 hours, or
Fridge overnight
Store in fridge for 4-5 days or freeze if not using immediately.
